Living up to my Cajun roots....Easy Gumbo Recipe

Living up to my Cajun roots and I made my very first Gumbo. 
Now this is super easy to make and to much amazement 
my thirteen year old even ate it. Score!



Now, first a little history about my family. I found out earlier this year that from my Dad's side of the family we are Cajun. Apparently, they came from France or Wells...something like that and from what I can gather some people were forced or kicked out and they ended up down south I guess. I'm not too sure on how that all works out but I'm Cajun. So with that new knowledge I thought to myself why not make a new dish that reflects some family history and not just another dinner idea. 

The recipe I have I found on pinterest and then just kinda did my thing to make it mine. It's so easy and was amazing. The flavors were incredible and packed a great zesty punch. One of the best parts is that it's a crock pot dish, so you can set it and forget it. I used that time wisely and took a hour nap while it simmered. One can never have too many naps! 

Now for the fun part...what you'll need to make my easy chicken, shrimp, and sausage gumbo. Instead of adding the shrimp, try adding some Lobster! 

Ingredients

1-1/2 cups Chicken Broth
1 stick of butter
2 tab flour
2 cups cooked rice
3 cloves of garlic
3 basil leaves
1 sausage link
1 lbs chicken 
half an onion
2 stocks of celery
1 6 oz can tomato paste
1 can tomato stewed canned
1 tea Cajun seasoning
1/4 tea cayenne pepper
1 green bell pepper
1 bag shrimp cleaned and de-tailed
salt and pepper to taste

Directions


  1. You'll need a medium to large size skillet. I used the same pan for all the ingredients. 
  2. First thing I did was heat my pan to low, I wanted to melt my butter slow while I cut up the garlic, onion, and green bell pepper. After everything was diced, I added the 3 cloves of garlic diced, the bell pepper diced, and half an onion diced. Slowly brought that to a low simmer and added two passes of salt and pepper. 
  3. Next once that has had a chance to cook down a bit, I added about two tablespoons of flour.  I wanted to thicken up my butter mixture. Once mixed together I removed that from the heat and placed in my crock pot. 
  4. Then I moved on to the sausage. I want this to have a nice golden brown color to it. It helps release all that great flavor that sausage brings to a dish. Once that has browned nicely, I added that to the crock pot as well. 
  5. Now for the chicken. I used chicken tender and removed the fat and any unwanted parts, diced and cooked until white and not pink on the inside. Added to crock pot when completely cooked. 
  6. Okay so all those yummy flavors are added, now let's go ahead and add the can of tomato paste, can of stewed tomatoes, and the seasonings. I used very little Cajun seasoning and never ended up adding the cayenne pepper. I have young kids and wasn't sure they'd like it too spicy. 
  7. Once those ingredients have been added I stirred everything together and then added 1 cup of chicken broth. Mixed well and set temp to high and timer for 2 hours. Nap time!! :)
  8. After 2 hours, I stirred and checked flavor. WOW!! Amazing! I didn't need to add anything else and just started making the rice. 
  9. I used just a half a cup of rice to one cup of water. Cover on low for 20 minutes. No, lifting the lid!! :)
  10. While that is cooking, we can clean and thaw the shrimp. I placed the shrimp in a small bowl full of warm water. Removed tails and set a side. 
  11. Once rice was cooked, I removed it from the heat. Fluffed with a fork and added that to the crock pot. Mixed together and added the shrimp. Mixed together. Cooked for 25 mins longer to bring to a simmer. 
  12. Yum, yum now you can eat it up!! I made bread that I heated up in the oven for 15 minutes at 400 degrees wrapped in foil.

This was a fun and super easy recipe that really packed a flavorful punch. I didn't eat mine with shrimp and it was still fabulous!

Easy, Coconut Dream Bars! Old Family Recipe..shh Don't Tell!

One of my favorite things to make every year during the holidays is my Grandma's Coconut Dream Bars. They are probably one of the richest tasting and easiest recipes to make and a true crowd winner!  




INGREDIENTS
  • 3 cups finely ground cookies (12 ounces), such as graham crackers or chocolate wafers, or a combination
  • 1/4 cup sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, melted
  • 1 cup pecan pieces
  • 1 cup semisweet chocolate chips or chunks
  • 1 can (14 ounces) sweetened condensed milk
  • 1 1/2 cups sweetened shredded coconut


DIRECTIONS
  1. Preheat oven to 375 degrees. Lightly splash a 15-by-10-inch rimmed baking sheet evenly with water, then line with parchment paper.
  2. In a large bowl, stir together cookie crumbs, sugar, and butter until combined. Evenly press onto bottom and up sides of prepared baking sheet. Bake, rotating halfway through, until firm, about 10 minutes. Transfer to a wire rack; cool, about 20 minutes.
  3. Sprinkle cooled crust evenly with pecans and chocolate. Pour condensed milk over the top, spreading to cover completely (do not let it drip over the edges). Sprinkle with coconut.
  4. Bake until coconut is toasted, 10 to 15 minutes. Transfer to rack; cool completely. Trim edges, if desired, and cut into equal-size bars.
Super yummy and so easy to make. I add a little more sweet and condensed milk on top of the coconut, from what's left over in the can. Yes, Grandma! I used the spatula!

Let's make a difference in a child's life! 

Everyday, I am so thankful for the people in my life and the gifts God has given me but my children are the biggest gift I've ever received and I can't imagine life without seeing them smile or hearing them laugh. That's why I'm writing today. 

I'm so profoundly impacted on a daily basis by St. Jude and all these amazing children who are fighting the biggest fight and it's for their lives. It brings me to my knees. I can't imagine the struggle, the fear, the shear devastation they all must be feeling. 

St. Jude is an amazing hospital and they need our help, these kids need our help! 

I've created a page where you can make a donation to them and have made a goal of $500. I know that doesn't sound like much and I'm not saying you have to stop there!! We can all do our part. If you can't donate, then I'd please encourage you to share the page or post with friends and family. 

Let's me a difference in a child's life! In their families lives! One in five will die from cancer and one is diagnosed every hour. Please, let's not wait and let's get involved.

Hello..November!



I love this time of year. Beautiful fall colors, hot crackling fires, the holidays with people we love. 
It can be a magical time and a very stressful time. Dealing with shopping and planning. All the cooking....oh the cooking! Which is great and I love doing it, it's more the dishes I hate. :)

After a long day either at home as a busy mom or working a stressful job, you deserve some you time. I personally love my bathes, they just really help me unwind and relax. I'm calling you out!!!

I'm calling you out...


I think it's about time we discuss your driving...

Now, not all of you are horrible drivers and as we talk further, I'm sure...you'll know who you are...

Where do I begin? Let's just start with this weeks drivers.



Yesterday, we are driving on the 1-17 heading to court downtown. I'm in the middle lane. Driving. Minding my own business...when suddenly I almost get side swiped by a car to my left. I swerve, she misses...I'm pissed!

Now a common mistake, I can over look no problem but this was different. 


What do you do next? Yes, oh course! You pull right up next to them. You have to see what or why, what they are doing????

You wanna know what she was doing? Something I've never seen before while driving...

FLOSSING!!!! Oh my nasty are you serious!!!! I couldn't believe it. I was shocked, discussed. Not only is that one of the dumbest things I've seen. It's also very unsanitary. She's not washing her hands. So her nasty, plaque infested hands are going to touch everything. The entire day. I'm horrified just reliving the experience.

Seriously, please...for the health of those around you. Stop it, it's gross!!!!!!!!!!

The next driver is very common. You've seen them, probably daily.
The texters! You always know who they are. They are the ones, that at a stop light, who are always about half a football field length away from the vehicle in from of them. Never drive the speed limit. Yet use the left lane...drives me crazy.

Literally, it's everything within me to not honk my horn like a psycho. Waving my arms about and pointing.

Please, please...for your safety and mine. Please don't text and drive. Have you not seen those horrible commercials? So scary and you'd feel so bad, if you hurt someone or yourself.

Think about others when out driving. Some people are carrying precious cargo. Cargo you can't replace. Like children, parents, pets and you. Life is valuable and a gift. Don't mess that up for you or anyone else.

I won't go into other horror stories but will call out the rest of you, in my list below. This us a message from ALL of us and we are sick of your bad driving.

The aggressive women
The oldies

You are all called out! Please discontinue and just drive.
