The Best Three-Cheese Lasagna Soup



Today, I'll be sharing with you a family recipe for the best three cheese lasagna soup. I love recipes that aren't super time-consuming. 

Being a mom, anything that saves you time is a life saver. Plus, this isn't a very spicy recipe and my kids loved it just as much as the adults did. We made it for our small group for church.

 However, we all had to try a little bowl before serving it. I'm very happy with the results and hopefully, it will become a new family favorite for you and yours as well. 

The Best Three-Cheese Lasagna Soup

Ingredients:

19 oz ground Italian sausage, hot or mild. 
1 (14.5 oz) can fire roasted diced tomatoes with garlic
1/2 (6 oz) can tomato paste
1 (8 oz) can tomato sauce
1/2 Tbsp. dried Italian seasoning
6 cups chicken broth
1/2 Tsp. onion powder
1/2 Tsp. kosher salt
1/2 black pepper
8 oz dried campanelle pasta (Bell Shape)
1/2 cup part-skim ricotta cheese
2 Tbsp. grated Parmesan cheese
4 oz shredded Mozzarella cheese
2 basil leaves, chopped fine

Directions:

In a large skillet over high heat, brown sausage. Making sure to break apart into small bite size pieces, until fully cooked or no pink is left. Drain well. 

In a large (12 quart) pot over medium heat add tomatoes, paste, sauce, seasonings, onion powder, salt, pepper, and chicken broth. Stir to combine. Once sausage is done, add to the pot. Cover and bring to a boil. 

We cooked our pasta in a separate pot and was unable to find the campanelle shells, so we used two boxes of DaVinci signature tortellini which is a tomato & three cheese filled pasta. Two boxes because we wanted to double the recipe. You'd just be using one box if not doubling. 

 Once water is boiling add pasta, cook uncovered, until it is al dente or about 7-9 minutes. Turn of heat and drain. 

Once our sausage mixture was boiling we transferred that to the crock pot and separated the liquid from the sausage mix. Added enough juice to fill the crock pot and discarded the rest. 

Then added our sausage mix and pasta. We did it this way because we didn't want a real soupy mix. We wanted it to have equal amounts of liquid to sausage mix ratio. 

Once in the crock pot, we added the ricotta cheese, parmesan cheese, and mozzarella cheese. Stir well to combine.

Sprinkle top with freshly chopped basil leaves and enjoy. 

Serve with warm Artisan bread, sliced and homemade garlic butter.

Skip Tradition! Opt for one of these Thanksgiving Appetizers!!

Traditions are great and don't get me wrong, I love doing the normal, predictable Thanksgiving food. So when my Mom came to me this year and said we should think about doing something new, not only was I surprised, but I didn't even know where to begin. 

Every year, at least for my family, has been the same exact thing for Thanksgiving. Some may say, "how on earth can you do that?" Which I always reply with "Well, we only eat it once a year, so." I guess I never really thought it was a big deal. I like turkey and you can't go without all the wonderful side dishes. Potatos, Green Beans with those yummy roasted onions on top. Some people do Candy Yams, we do not. Although, it is one of my Mothers favorites. Let's see what else, ah yes, the pies! Pumpkin of course and sometimes we will throw in a cheesecake if we are feeling fancy. 

Our appetizers are no different. Cut up veggies, with a homemade ranch sauce. Which really is to die for! The meat and cheese platter with the fun sausage and many different kinds of cheeses. Boats loads of crackers, like Chicken and a Biscuit, Triscuits, and my favorite Wheat Thins. A Veggie cracker may even make an appearance. Now, it has been this way for as long as I've had Thanksgiving. Sure a change kind of sounds nice but I have to admit, I'm already cringing at the fact that there will be no veggies and cheese and lovely sausage. I live for my Platters! 

So, being the big girl that I am, I started looking for some new ideas. Nothing is better than Pinterest for new ideas! 


Homemade Cheese Crackers


Spend no more on those cheesey goldfish, with this easy to do recipe! 

Ingredients:

1 cup plain flour
This can be done in a 50/50 mix with wheat flour and all purpose if you like. 

8oz shredded cheese
Sharp/Extra Sharp Cheddar Cheese
60g or about 1/2 cup Unsalted, cold butter

1/4-1/2 teaspoon Salt

2 Tablespoons Cold Water

How to make:
  • Step 1. Use a pastry blender or hand mixer, cut butter into flour until it forms coarse crumbs. 
  • Step 2. Add salt and mix together
  • Step 3. Next, add the shredded cheese and cut into mixture. 
  • Step 4. Add water, 1 T at a time!
  • Step 5. Use your hands to form a dough ball and divide into 2 portions. Wrap them in plastic and chill for about 20 minutes or longer. 
  • Step 6. Preheat your oven to 325 degrees. 
  • Step 7. Line baking tray with parchment paper.
  • Step 8. Working with one portion of the dough at a time. Place dough in between two sheets of wax paper or cling wrap. Roll dough out to about 1/8" thickness. Cut in shapes of your choice. I did little squares! Transfer to baking sheet. 
  • Step 9. Use a chopstick or toothpick to create the tiny holes or eye balls, if you did fish. 
  • Step 10. Continue gathering the trimmings and re-rolling until mostly gone. Add the remainder to the resting dough in the fridge. 
  • Step 11. Bake for around 15-17 minutes depending on shape and size of crackers. Keep checking to make sure they don't burn! Cool for 10 minutes before removing from tray and store in air tight container. 


Little Smokies

If you're a sausage fan like me, this is for you as well!! 
I love to make these, not only are they super satisfing but the are easy to make! 


Ingredients:

1 16oz pound of Bacon
1 14oz package of Little Smokie Sausages
1 Cup Brown Sugar

Directions:
1. Preheat oven to 350 degrees. Line a baking sheet or jelly roll pan with tin foil. 
2. Cut bacon into thirds using a sharp knife or scissors. 
3. Wrap 1 of the bacon slices around each smokie and secure with a toothpick. 
4. Place on baking sheet or jelly roll pan. Sprinkle with brown sugar. 
5. Bake sausage for 40-45 minutes or until the bacon is crisy and brown sugar has melted. 
6. Serve right away or keep warm in a crockpot. Makes around 48 little smokies. 

Irish Potato Bites

I chose this because not only does it have potatos, which I love but it is an Irsh recipe as well. Winning!! 


20 Red Potatos
1/2 cup Shredded Cheese
Sour Cream Optional
Salt and Pepper
Chives
Bacon Pieces
1 Tablespoon Butter

To make:

  • Fill large pot with water, add cleaned potatos. Bring to a boil. 
  • Cook until fork tender. 
  • Preheat oven to 400 degrees. 
  • Once potatoes are cooked and have cooled, cut each one in half. Be sure to slice a bit from the bottom to level the potato halves, so they sit up with rolling over. 
  • Scoop out center of each potato half and save in another bowl. 
  • Add cheese, butter, chives to bowl. Salt and pepper to taste. Also sprinkle salt over potato halves. 
  • Refill potato halves with mixture. 
  • Place on baking sheet and into oven for 10 minutes to reheat and melt the cheese. 
  • Remove from oven and serve with sour cream and bacon bits. 


7-Layer Bean Dip


Ingredients:
4 Tomatoes, seeded and finely chopped. 
1 package taco seasoning
1 16oz container sour cream
1 large can olives, drained and sliced. 
1-2 16oz cans refried beans
3 ripe avocadoes, mashed.
1-2 cups grated cheese.
1 cup green onions, chopped. 

Directions:

1. Layer ingredients in order listed in 9x13" pan. Spread each layer out evenly. 
2. Serve with tortilla chips, bread, or your favorite and Enjoy! 

Mini Fried Onion Blooms


Ingredients:

2 pounds Cipollini onions, peeled and sectioned. Not cut through all the way. 
2 large eggs
1 cup buttermilk
2 cups all-purpose flour
1 Tablespoon paprika
1 Tablespoon kosher salt
1 teaspoon garlic powder
Vegetable oil for frying

Directions:

1. Prep onions by slicing and removing the root end. Carefully peel each onion. Using a sharp knife to cut onions into eighths. Do not cut all the way through. 
2. Gently separate each piece into sections. Being careful not to completely undo them. 
3. Toss in buttermilk and egg mixture. Let sit for 5-10 minutes to soak. 
3. Stir together flour, paprika, salt, pepper, garlic powder, and cayenne. Remove from buttermilk and dust heavily with flour mixture. Get into all the cracks of each onion. 
4. Heat fryer to 350 degreees. Fry each onion for about 4 minutes or until they are golden brown. Remove to papertowels to drain. 
5. Serve with homemade dipping sauce. 

Dipping Sauce:

1/4 cup mayo
1/4 cup sour cream
1 Tablespoon Ketchup
1/2 teaspoon paprika
Pinch of salt and pepper


Hummus Dip


Ingredients:
1 15oz can chickpeas
1/4 cup fresh lemon juice
1/4 cup well-strained tahini
1 small garlic clove
2 Tablespoons extra virgin olive oil
1/2 teaspoon cumin
salt to taste
2-3 Tablespoons water
Dash of ground paprika

Directions:

    In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute, scrape the sides and bottom of the bowl then process for 30 seconds more. This extra time helps “whip” or “cream” the tahini, making the hummus smooth and creamy.
      Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended.
      Open, drain, and rinse the chickpeas. Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and quite smooth; 1 to 2 minutes.
      Most likely the hummus will be too thick or still have tiny bits of chickpea. To fix this, with the food processor turned on, slowly add 2 to 3 tablespoons of water until you reach the perfect consistency.
      Taste for salt and adjust as needed. Serve hummus with a drizzle of olive oil and dash of paprika. Store homemade hummus in an airtight container and refrigerate up to one week.

Not Your Tradition Veggie Tray


Spicy up this years veggie tray with fun colorful seasonal veggies! 

Cut them into different shapes! 

Try a new dipping sauce instead of ranch! 

Just have fun and explore taste buds you normally wouldn't! 

Hot Chocolate Fudge

Ingredients:

2 cups dark chocolate chips
14oz sweetened condensed milk-divided
1 cup white chocolate chips
1 1/2 cups marshmellows, mini. 

Directions:
In a microsafe bowl or over a double boiler melt white chocolate chips and 3 Tablespoons of sweetened condensed milk. 

In a separate bowl, combine dark chocolate chips with remaining sweetened condensed milk. 

Line a pan 9 x 9" with foil and grease with butter or shortening. 

Microwave dark chocolate for 30 seconds and stir. Microwave for 15 more seconds then stir until smooth. Transfer mix into prepared pan and spread even.  

Microwave white chocolate the same way. Stir until smooth. Spread on top of dark chocolate layer. 

Top with mini marshmellows and gently press down. Refrigerate for at least 4 hours to set and firm. 

Remove from pan and foil. Cut into bite size pieces. 

Cheesecake Yummy Bars


Ingredients:

1 log refrigerated cookie dough
20 oreos, plus some for crushed topping
2 8oz bars of cream cheese, softened
1/2 cup sugar
2 large eggs
1/2 teaspoon vanilla
Pinch of salt
Carmel for drizzeling over top

Directions:

Preheat oven to 325 degrees. Line a 8 x 8" baking dish with parchment paper or foil. Leave a 2" overhang. 

Press cookie dough into bottom of baking dish, in even layer. 

Top with a layer of Oreos. Make a single layer. 

Make cheesecake layer: 
In a medium bowl using a hand mixer. Beat cream cheese, sugar, eggs, vanilla, and salt. 

Pour over Oreo layer and smooth to form even layer. 

Top with more crushed Oreos and bake until the center is only slightly jiggly. About 35-40 minutes. Check around 35 minutes. 

Place in frige to chill for at least 3 hours or overnight. 

Remove cheesecake bars from baking dish and slice, drizzel with carmel topping. Enjoy!

Who wants fair food?


Every Fall my mind shifts to food. Don't get me wrong I love to eat and can put down a hefty plate but normally I just make regular dinners and the typical dessert. Nothing too crazy or exciting. Mostly meals that are quick and easy.  Like tacos or baked chicken but when it's Fall my mind moves to new ideas and fun dishes.

The last two nights I made a new dessert. Maybe not new but new to me and it got me thinking about the fair and all their wonderful choices. Fried bacon dipped in chocolate, Fried Twinkies, Giant chicken legs, and yummy smoked ribs! Oh, my gosh!

So tonight I'm going to give you some of my all time fair food recipes. I searched far and wide....no not really! Most were fairly easy, which made my day.
Let's start with the meat!

By meat, I am talking about pulled pork. It's not a fair without it and can't be left off my list.

1. Pulled Pork




Well, you can just eat meat..now can you? How about a side with that?
Why I'm glad you mentioned that. Your side this evening is something no fair can be without...something fried!

So I've got Fried Macaroni and Cheese Balls! Nothing is more of a comfort food than mac and cheese. Just thinking of it makes me think of being a kid. Well, now we are grown-ups and we can't just eat plain ole mac and cheese! Heck No! We must fry it!

Okay, are you stuffed? Not yet? Good, let's continue on to the dessert!

My first dessert is super yummy. You can smell it frying before you even get there! Funnel Cake, a new family favorite.  I've made this for two nights in a row. Super light and fluffy! Perfect fair dessert!

3. Funnel Cake

weird shapes that night! 


If you are more of a cinnamon sugar fan? Maybe you'd prefer Elephant Ears! These giant fried dough pies, sprinkled with cinnamon sugar is the main reason I go to the fair. Until now, I've not had the recipe. UNTIL NOW, MMUUAAHAAHHAA!

Oh, my heart is so pleased.  Life is complete!  Then I read the recipe. How did I not know this? Way easy and super basic. Those people are making a killing.

4. Elephant Ears



Now our first recipe, you know..the pulled pork? Well, that wouldn't be perfect without homemade Pretzel Buns. Yes, I said Pretzel Buns! Golden,  soft, and salty buns. They make the world go round. Or was the flat bottom girls? Doesn't matter. Those babies are so good and can be made into any sandwiches.  Turkey, ham, pork, chicken, or steak.

5. Pretzel Buns For the Pulled Pork




Fried Mac and Cheese Balls

Fried Mac and Cheese Balls 



Ingredients

4 Quarts Water
1 t Salt
2 C Uncooked Elbow Noodles
1/2 C Milk
3 T Milk
1 12oz Cream Cheese soft
1 C Mozzarella 
1/4 t Pepper
4 Large Eggs
2 C Italian Breadcrumbs
1/2 C Cornmeal
Peanut Oil for Frying

Cook Pasta, drain well. In large bowl combine pasta, 1/2 c milk, cheese spread, mozzarella, 1/2 t salt, and pepper. Stir until cheese is melted. 
Refrigerate for 8hours. 

Roll mac into 1" balls place on baking sheet, freeze 2hours. 

In small bowl mix eggs, milk. In another small bowl mix breadcrumbs and cornmeal. 

Heat oil to 350 degrees over medium heat. 
Cook 3-4 minutes or until golden brown. 
Drain well on paper towels. 


Elephant Ears

Ingredients

1 1/2 C Milk
1 tea Salt
2 T Sugar
3/8 C Shortening 
2 T Active Dry Yeast
4 C Flour

Topping

3 T Cinnamon
6 T Sugar
Mix together

In a small saucepan over medium heat combine milk, salt, 2 T sugar and the shortening. Transfer mix to large bowl. Stir in Flour to make the dough. 

In large skillet or deep fryer heat 1 inch of oil to 375. Roll out 1" to 2"
balls of dough into thin sheets. 

Carefully place, one each into the pan or deep fryer. Fry until golden brown on both sides. Drain on paper towel. Top with cinnamon/sugar mixture. 

One of my favorite Fair Foods of all time!! :)

Pancakes from scratch! #Nomnoms


Sometimes nothing is better than homemade pancakes from scratch and surprisingly enough, they are extremely easy to make! 

I've compiled all my favorite recipes over the years in honor of the unofficial National Pancake Day celebration! Who doesn't want to celebrate with a big ole stack of pancakes? I know I do!! Yes, you are correct the real day is March 8th according to IHop but for the sake of my stomach, and yours let's get down to business. 

In order to make pancakes from scratch, you'll need the following ingredients: flour, sugar, baking powder, salt, baking soda, milk, melted butter, and an egg. 

First, you need to whisk 1 1/2 cups flour and 3 T sugar, 1 1/2 t baking powder, 1/2 t salt, and 1/4 t baking soda in a medium size bowl. 
Next, whisk 1 c plus 2 T milk, and 4 T melted butter, plus the egg in a separate bowl. Fold into the flour until just combined. Lumps are ok! 

What flour works best? 

Using a self-rising flour in the pancakes will make them more American in style. They will be fluffy and thick. If you use plain flour the pancakes will be thinner ones, more like European crepes. 

Here are some interesting twists on pancake recipes that include fried chicken and a spicy sauce! 

Fried Chicken Pancakes with a Spicy Sauce

Ingredients: Pancakes
1 3/4 c yellow cornmeal, spooned and leveled
all-purpose purpose flour, spooned and leveled
4 t sugar
1 1/2 t baking powder
3/4 t baking soda
3/4 t kosher salt
2 1/4 c buttermilk
3 large eggs
1/4 c unsalted butter, melted. More will be needed for cooking. 

Crispy Chicken Fingers
2 1/2 c all-purpose flour
3 3/4 t baking powder
1 1/2 t onion powder
1/2 t cayenne pepper
2 t kosher salt
1 t ground pepper
1 1/2 c buttermilk
1 1/2 lb. chicken tenderloins
6 to 9 c canola oil

Spicy Syrup
1 c pure maple syrup
1 t tabasco sauce
1/2 t ground pepper
1/4 kosher salt

To make:
Mix pancake batter like directed in the first pancake recipe. Whisking together the ingredients in separate bowls and folding into flour. 
Prepared chicken in a separate bowl. Combine dry ingredients. Whisk together eggs and buttermilk in a separate bowl. 

Coat chicken, one piece at a time into flour mixture. Then into the buttermilk, and back into the flour. Let sit in four mixes for 10 minutes to get fully coated. 

Heat canola oil in the pan to about 360 degrees. Cook chicken for 40 minutes or until internal temp reaches 160. Season with salt. Set aside in warmed oven at the temp of 170. 

Place chicken in oven on a wire rack so air can circlate around the chicken. Making sure it comes out crispy and not soggy. 

To make the sauce add all the ingredients and whisk together. Let stand for 5 minutes. 

Place pancakes on plate, add chicken finger to top, and cover with spicy sauce!! #heaven

One of my favorite things to eat with my pancakes is peanut butter. Now, I know some of you are like "EEWWW" but I grew up eating them that way with my Daddy. Every time I have them like that, I enjoy the fond memories of his tasty homemade pancakes. My Dad makes the best pancakes in the West!! I'd put them up against anyones. :) 

So for our next recipe, it has wonderful peanut butter and of course chocolate chips! 

Peanut Butter Chocochip Pancakes
Ingredients: Pancakes
1 c pancake mix 
1 large egg
1/2 c peanut butter
1 c milk
1/2 t vanilla 
1 c semisweet chocolate chips
1 T unsalted butter

Combine all ingredients and whisk together, mixing well. Heat skillet and add 2 t butter. Cook pancakes about 2 or so minutes a side until golden brown. 
Top with peanut butter and syrup! 

Last but not least is one I have not tried nor heard of before, it's S'mores Pancakes! 
Ingredients: Pancakes
1 c all-purpose flour
1/2 c crushed graham crackers
1 t baking powder
1 t salt
1 1/4 c milk
1 large egg, beaten.
1/2 c semisweet chocolate chips

In a large bowl, whisk together the flour, graham cracker crumbs, baking powder, and salt. Stir in the milk, beaten egg, and the chocolate chips. Mixing very well to incorporate all ingredients. 
Heat skillet, add butter and about 1/4 cup batter into the pan. Cook about 2 minutes a side or until golden brown. 
Marshmallow Syrup
1 c marshmallow fluff
2 T warm water 

In another bowl stir together marshmallow fluff and water until smooth. If it's too thick you can add more water to thin it out. Warm in the microwave if desired. The marshmallow will expand so be ready for that!! Drizzle on pancakes and eat them up yum! 

For a Blueberry syrup:

1 c frozen blueberries
5 T sugar
1 t cornstarch
1 1/2 lemon juice
6 T pure maple syrup

Add the berries, sugar, and the 1/2 c water in a saucepan and cook over medium heat until sugar is dissolved. Remove from heat. Dissolve the cornstarch in 1 T cold water. Whisk into berries. Return to heat and bring to a boil while stirring for 2 minutes. Add lemon juice. Strain the syrup through a sieve into a bowl or jar. Pressing berries with the spatula to remove all the liquid. Discard the berries and stir in maple syrup. 

You can also dress any pancake up by adding a few pieces of chops bacon, fruit, or nuts!
