Mini Taco Bites...so good and a family favorite!

Mini Taco Bites

Super good and easy to make. A family favorite, and your friends will love it too!

Preheat oven to 350°

Ingredients 
Tortillas (your preference)
Refried beans
Ground beef
Taco seasoning
Lettuce
Onion
Tomatoe
Olive
Chives
Cheese
Sour cream


Ok...let's start! Take your tortillas and use a circle cookie cutter to cut out little circles. If you don't have one, you can use a cup with a thiner edge. 

Place cut cirles in bottom of muffin or cupcake pan. 

You'll also want to brown the ground beef and add taco seasoning. Set a side or keep in pan for use later.

Add the toppings! 
I started with the beans, then ground beef, cheese and then the veggies. Tomatoes, onions, olives, and chives. Plus more cheese to top off. 

Cook in oven for 12-15 mins, when cheese is melted and sides are golden. Remove.

Next, I added the lettuce and sour cream. I didn't want the lettuce to wilt and my sour cream melting everywhere. :)

Nom, nom...eat up and enjoy. So good and easy as pie.
