Easy 15 Bean Soup Recipe

Normally when I have leftover ham from the night before I always make a Pinto Bean and Ham soup. Well at the store last night, they were out of Pinto beans and I saw this bag that read 15 Bean soup, use with ham or sausage. I was like "Yeehaw!" 

Quickly read through the recipe and got all the ingredients I'd need. This is a little bit different than the normal Pinto and Ham soup because you add Chili Powder, Lemon Juice, and Tomatoes but man is it good and beans are super good for you! In just 1/2 cup you're getting 8g of Protein. Which is a bonus, I love food that is good for you and tastes great.


The ingredients of the package are as follows:
Northern, Pinto, Large Lima, Yelloweye Bean, Garbanzo, Baby Lima, Green Split Pea, Kidney, Cranberry Bean, Small White, Pink Bean, Small Red, Yellow Split Pea, Lentil, Navy, White Kidney, and Black Bean.

What You'll Need For The Recipe:
20oz. 15 Bean Soup Bag
1 Cup Onion
1 14.5 oz. can Diced Tomatoes
1 tsp Chili Powder
Juice of 1 Lemon
1-2 Cloves of Garlic
Optional- 1lbs of Ham, Ham Hocks, or Smoked Sausage.
After having the soup last night you could even do it more of a gumbo-style and add potatoes, chicken, ham, or whatever type meat you prefer. This can really be done in so many fun ways.

It makes a large stew pot full or two 16qt cooking pots. I used two and made one for me and one for my Mama <3 font="" nbsp="">

Now you can do this two different ways, one is the Traditional Way and two is the Quickcook Way. I choose to do it the Traditional Way. I will show you both of them below.

Traditional Way:



  • Rinse Beans in water always before using, there can be rocks or other debris in the bag that you won't want in your soup. 
  • Place Beans in covered pot with 8 cups of water for 8 hours or even overnight if you wish. I let mine soak just under 5 hours and was fine. 
  • After soaking beans, drain, rinse and place back into cooking pot. 
  • Add 8 cups of water and onion. Add any meat you are using at this time as well. For me, I used a brown sugar ham that I had baked the night before. The ham was sweet and added a nice caramel sugar taste to the soup. The smell coming from the ham cooking in the soup was almost unbearable. It was hard to weight for it to be fully cooked. I also added my salt and pepper at this step.
  • Bring Beans to a boil, reduce heat and simmer covered for 1 1/2- 2 hours. Stir Occasionally. 
  • After simmering, add tomatoes, chili powder, lemon juice, and garlic. Simmer covered for another 30 minutes. 
The beans soaked for about 4 1/2 hours and the whole cooking time for me was about 2 hours total. I cooked the beans, ham, and onions for about 1hr 45 mins and then added the rest of the ingredients and cooked another 10 mins or so. Now remember that I did have mine in two separate pots which helped to speed up the cooking process. 


Once fully cooked, and that can be tested by either having a bitty or I used a knife to stab the beans and see if they were soft. 

I served it with a warm french bread and butter. My kids which are 8 and 13 and very picky ate it and liked it. So two thumbs up!! I'd definitely make it again and will be a new family favorite.

M8S TV Box Review, Plus The Top Repos and Addons!!



Today, I'm doing a review on the M8S Android TV Box and will also give my opinion on what I have found to be some of the best repos (repositories) and add-ons.  

For those of you who haven't heard of these tv boxes, let me quickly give you a run down. You can buy a tv box from, just about anywhere nowadays and depending on what type of operating system you prefer. I always go with Android because I just prefer Android over other systems. I like the selection of apps, it's ease of use and it's functionality. So my review today will be from an Android box perspective. 

The main system of the box is a little thing called Kodi. Kodi can be download and added to any device or operating system and with that installed a world of doors open to you. You now have access to some of the best repos, amazing add-ons and of course what you have been waiting to here...live tv and movies!!  

I like the box so far, although it has given me problems and I have had to completely reset it back to factory settings. I'm still very pleased with the box and am amazed at all the great things I can view now vs cable or satellite tv subscriptions. 

So once you have downloaded Kodi, which can be put on your phone, tablet, computer, or tv box you can then begin to add the different repos and add-ons that correspond. 

Three of the absolute best repos that I use and have found to have the most bang for your buck are listed in order from awesome to good. 

1. Superrepo
Superrepo is by far the best and has the most add-ons and different repositories all in one.

2. Fusion
Tvaddons has put together a great repo and has a ton of great add-ons or apps you could say.

3. Dexter Tv
Dexter Tv is great and yes, you can catch live tv from its add-ons but I have had quite a bit of trouble with this one and it can work one day, and then be down for a week. It really all depends on what the problem is. So, I like it but it drives me crazy at times as well.

These are the only repos I have installed on my box. To install a repo, it is pretty simple and I can show below. :)

To add a source or repo to your Kodi system, open Kodi and go over to the tab that says Settings>File Manager>


Once you have opened File Manager. It should look like this, in the picture above. Click on Add Source>


Click where it says None. It will delete for you and begin typing the source link. An example in the box below. 


Then click the box right underneath and type the name of the repo, for this example it says Superrepo. Tip**To make the name go to the top of the list add a period in the front of the name. Click OK. 


Next, go to System>Setting>Add Ons
Install from Zip file and this is where you'll find the source you just added. Click on the name of the file to open>


Choose your operating system for Kodi, you can find that info under your Kodi Setting on the main menu or just pay attention to what it says when you open Kodi and write down the operating system you see. (Example, Isengard or Helix or Gotham or Jarvis.)

Open the repo and it will install for you and enable that repo. Then all you have to do is go back into the System>Setting>Install from Repo>Addons>Video Addons..and this is where you can enable the add-ons or app which has all the good content you want to see. 

So an example would be let's say I want to watch live tv.
I'm going to add a source to my box described above and the open the repo I just added. After that has installed, I need to install the Exodus repo and addon located inside the fusion tvaddons file that was just installed. 

 Once the repo for Fusion is installed. Open System>Setting>Install from Repo>Exodus Repo, it will enable. Then System>Setting>Video Addons>Exodus Addon and click to open that and enable it. Once that is installed, you can back completely out of that. Back to your main Kodi menu and choose Video>Addons>Exodus

Once inside you have a wide range of possibilities. You can view Live Tv, Watch movies that are in the theaters and have access to all your favorite show and series from most of the major networks. 

And this is just one of the repos and add-ons you can add. The list just gets bigger. According to Superrepo's site they have a list of 3,696 add-ons. That is crazy and awesome! 

Now, before you get all excited like I did. Just remember this. They run off of servers just like anything else. Systems go down, links get updated and have to be refreshed. The cache needs to be cleared daily, and at times can make you pull your hair out but I do love my M8S Tv box and my favorite part is all the money I save from not paying my cable bill. 

Some of my favorite add-ons are CloudTV, tons of live tv channels as well as movies and sports. Most of these add-ons are available under the Superrepo and once enabled give you access to a bunch of different shows from sports to cartoons, live tv, movies, documentaries, and many more! 

I also like Dexter Tv, Channel Pear, Ice Films, Phoenix, Aka Monster. All available and most work without any glitches. Dexter Tv came give you trouble and some of the add-ons won't work occasionally. Make sure you clear the cache before doing anything crazy like factory resetting your box like I did and had to learn the hard way.

Living up to my Cajun roots....Easy Gumbo Recipe

Living up to my Cajun roots and I made my very first Gumbo. 
Now this is super easy to make and to much amazement 
my thirteen year old even ate it. Score!



Now, first a little history about my family. I found out earlier this year that from my Dad's side of the family we are Cajun. Apparently, they came from France or Wells...something like that and from what I can gather some people were forced or kicked out and they ended up down south I guess. I'm not too sure on how that all works out but I'm Cajun. So with that new knowledge I thought to myself why not make a new dish that reflects some family history and not just another dinner idea. 

The recipe I have I found on pinterest and then just kinda did my thing to make it mine. It's so easy and was amazing. The flavors were incredible and packed a great zesty punch. One of the best parts is that it's a crock pot dish, so you can set it and forget it. I used that time wisely and took a hour nap while it simmered. One can never have too many naps! 

Now for the fun part...what you'll need to make my easy chicken, shrimp, and sausage gumbo. Instead of adding the shrimp, try adding some Lobster! 

Ingredients

1-1/2 cups Chicken Broth
1 stick of butter
2 tab flour
2 cups cooked rice
3 cloves of garlic
3 basil leaves
1 sausage link
1 lbs chicken 
half an onion
2 stocks of celery
1 6 oz can tomato paste
1 can tomato stewed canned
1 tea Cajun seasoning
1/4 tea cayenne pepper
1 green bell pepper
1 bag shrimp cleaned and de-tailed
salt and pepper to taste

Directions


  1. You'll need a medium to large size skillet. I used the same pan for all the ingredients. 
  2. First thing I did was heat my pan to low, I wanted to melt my butter slow while I cut up the garlic, onion, and green bell pepper. After everything was diced, I added the 3 cloves of garlic diced, the bell pepper diced, and half an onion diced. Slowly brought that to a low simmer and added two passes of salt and pepper. 
  3. Next once that has had a chance to cook down a bit, I added about two tablespoons of flour.  I wanted to thicken up my butter mixture. Once mixed together I removed that from the heat and placed in my crock pot. 
  4. Then I moved on to the sausage. I want this to have a nice golden brown color to it. It helps release all that great flavor that sausage brings to a dish. Once that has browned nicely, I added that to the crock pot as well. 
  5. Now for the chicken. I used chicken tender and removed the fat and any unwanted parts, diced and cooked until white and not pink on the inside. Added to crock pot when completely cooked. 
  6. Okay so all those yummy flavors are added, now let's go ahead and add the can of tomato paste, can of stewed tomatoes, and the seasonings. I used very little Cajun seasoning and never ended up adding the cayenne pepper. I have young kids and wasn't sure they'd like it too spicy. 
  7. Once those ingredients have been added I stirred everything together and then added 1 cup of chicken broth. Mixed well and set temp to high and timer for 2 hours. Nap time!! :)
  8. After 2 hours, I stirred and checked flavor. WOW!! Amazing! I didn't need to add anything else and just started making the rice. 
  9. I used just a half a cup of rice to one cup of water. Cover on low for 20 minutes. No, lifting the lid!! :)
  10. While that is cooking, we can clean and thaw the shrimp. I placed the shrimp in a small bowl full of warm water. Removed tails and set a side. 
  11. Once rice was cooked, I removed it from the heat. Fluffed with a fork and added that to the crock pot. Mixed together and added the shrimp. Mixed together. Cooked for 25 mins longer to bring to a simmer. 
  12. Yum, yum now you can eat it up!! I made bread that I heated up in the oven for 15 minutes at 400 degrees wrapped in foil.

This was a fun and super easy recipe that really packed a flavorful punch. I didn't eat mine with shrimp and it was still fabulous!

Easy, Coconut Dream Bars! Old Family Recipe..shh Don't Tell!

One of my favorite things to make every year during the holidays is my Grandma's Coconut Dream Bars. They are probably one of the richest tasting and easiest recipes to make and a true crowd winner!  




INGREDIENTS
  • 3 cups finely ground cookies (12 ounces), such as graham crackers or chocolate wafers, or a combination
  • 1/4 cup sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, melted
  • 1 cup pecan pieces
  • 1 cup semisweet chocolate chips or chunks
  • 1 can (14 ounces) sweetened condensed milk
  • 1 1/2 cups sweetened shredded coconut


DIRECTIONS
  1. Preheat oven to 375 degrees. Lightly splash a 15-by-10-inch rimmed baking sheet evenly with water, then line with parchment paper.
  2. In a large bowl, stir together cookie crumbs, sugar, and butter until combined. Evenly press onto bottom and up sides of prepared baking sheet. Bake, rotating halfway through, until firm, about 10 minutes. Transfer to a wire rack; cool, about 20 minutes.
  3. Sprinkle cooled crust evenly with pecans and chocolate. Pour condensed milk over the top, spreading to cover completely (do not let it drip over the edges). Sprinkle with coconut.
  4. Bake until coconut is toasted, 10 to 15 minutes. Transfer to rack; cool completely. Trim edges, if desired, and cut into equal-size bars.
Super yummy and so easy to make. I add a little more sweet and condensed milk on top of the coconut, from what's left over in the can. Yes, Grandma! I used the spatula!

Let's make a difference in a child's life! 

Everyday, I am so thankful for the people in my life and the gifts God has given me but my children are the biggest gift I've ever received and I can't imagine life without seeing them smile or hearing them laugh. That's why I'm writing today. 

I'm so profoundly impacted on a daily basis by St. Jude and all these amazing children who are fighting the biggest fight and it's for their lives. It brings me to my knees. I can't imagine the struggle, the fear, the shear devastation they all must be feeling. 

St. Jude is an amazing hospital and they need our help, these kids need our help! 

I've created a page where you can make a donation to them and have made a goal of $500. I know that doesn't sound like much and I'm not saying you have to stop there!! We can all do our part. If you can't donate, then I'd please encourage you to share the page or post with friends and family. 

Let's me a difference in a child's life! In their families lives! One in five will die from cancer and one is diagnosed every hour. Please, let's not wait and let's get involved. 

Share the heck out of this!! No child!,  should ever have to go through what these children are going through. No parent should have to bury a child.

Five Christmas Crafts, that will keep the kids busy during break!

Christmas is just around the corner and I don't know about you but soon the kids will be home for Christmas break.
